Looking for a healthy dinner that doesn’t skimp on flavour? This grilled salmon with avocado salsa is quick to prepare and packed with good fats and fresh ingredients. It’s perfect for a light, satisfying meal any night of the week.

Ingredients:

  • 4 salmon fillets, skin on
  • 1 tbsp olive oil
  • Juice of 1 lime
  • 1 tsp ground cumin
  • Salt and pepper, to taste

For the avocado salsa:

  • 1 large avocado, diced
  • 1 small red onion, finely chopped
  • 1 medium tomato, diced
  • Juice of 1 lime
  • 1 tbsp fresh coriander, chopped
  • Salt and pepper, to taste

Method:

  1. Preheat a grill pan or barbecue to medium-high heat.
  2. In a small bowl, mix olive oil, lime juice, cumin, salt and pepper. Brush over the salmon fillets.
  3. Place salmon skin-side down on the grill and cook for 4–5 minutes per side, or until just cooked through and lightly charred.
  4. While the salmon cooks, combine all salsa ingredients in a bowl. Gently toss to combine.
  5. Serve the grilled salmon topped with a generous spoonful of avocado salsa.

This dish pairs well with a side of steamed greens, roasted sweet potato, or a fresh garden salad. It’s nutritious, delicious, and on the table in under 30 minutes.
