Ingredients:
- 4 salmon fillets, skin on
- 1 tbsp olive oil
- Juice of 1 lime
- 1 tsp ground cumin
- Salt and pepper, to taste
For the avocado salsa:
- 1 large avocado, diced
- 1 small red onion, finely chopped
- 1 medium tomato, diced
- Juice of 1 lime
- 1 tbsp fresh coriander, chopped
- Salt and pepper, to taste
Method:
- Preheat a grill pan or barbecue to medium-high heat.
- In a small bowl, mix olive oil, lime juice, cumin, salt and pepper. Brush over the salmon fillets.
- Place salmon skin-side down on the grill and cook for 4–5 minutes per side, or until just cooked through and lightly charred.
- While the salmon cooks, combine all salsa ingredients in a bowl. Gently toss to combine.
- Serve the grilled salmon topped with a generous spoonful of avocado salsa.
This dish pairs well with a side of steamed greens, roasted sweet potato, or a fresh garden salad. It’s nutritious, delicious, and on the table in under 30 minutes.
